Graduation From Leadership Weld County

Today was our last class with Leadership Weld County. The topic of the day was “Healthcare” and so I was fairly familiar with most of our health care system in Weld County. It was still nice hearing about all the programs and how they interface with each other. Then tonight we had our graduation ceremony. Before we left, I had Britton take a few pictures of me all dressed up in “Business Attire”. But…how could I take pictures in our backyard without a chicken? So here is where the city meets the country -lol.

The banquet and ceremony were nice. We reminisced about the various classes we had. From jumping off poles to seeing all the dead cows, visiting oil rigs and civic centers and many places in between, it was a very good experience and I would recommend LWC to anyone who is interested in becoming a leader in our community and/or learning more about what makes Weld County tick. Mother’s Day 2010

We had a nice weekend today and I was able to put together our first spring flower bouquet. This bouquet is made with columbines, tulips and bleeding hearts from our flower garden!

For Mother’s Day we went over to Britton’s parents’ house and helped to put up a lattice area with his sister as a surprise to his mom. Then later in the afternoon we had my parents and grandma come over for some shish-kabobs. It was a nice, sunny and windless (thankfully!) day. Happy Mother’s Day!

Quick and Tasty Snacks

We happened to take a sample snack at the grocery store the other day, and immediately liked it. It was quick and easy, and quite tasty. I think they’re called California Snackers.

Ritz crackers (whole wheat)
Avocado slices
Tomato slices
Salsa

Place the avocado first, then the tomato and the dap of salsa on each Ritz cracker. Voila! Instant hors d’oeuvres!

We also have lots of lettuce coming up in the greenhouse and garden. It is the clip and keep growing kind, so for the whole summer practically until it bolts we will have fresh garden salads! Yum!

Some Semblance of a (Slow and Steady) Plan

Britton and I have been having a lot of hardcore discussions that get to the heart of “what do we want to do with our lives?” Then we laugh and think, do other people have these strange conversations as often as we do? I have no idea, but I know that we’ve been having them a lot lately.

While our plans and ideas can change on a dime if an opportunity pops up (like a property with acreage in Colorado or a smokin’ deal on another rental), we think we have some semblance of a plan. So here goes. I think we are going to stay in Colorado working and saving for as long as possible (with the uncertainty of my job, that is one of the unknowns) until we have saved up enough to pay off another of our rental properties. At that point we believe we will be more financially secure. With all the news coming out of Puerto Rico talking about lack of employment and the consolidation of most of their banks into Banco Popular we think this would be wise. Plus, if everything, including housing prices, drop through the floor in Puerto Rico we’ll be better poised to  jump on those opportunities.

So we’re not sure still on the exact ETA, but we do have an exact number in our head of how much we need to save up. And in this lanscape of unknowns, something exact is comforting.

We are getting another roommate here in Colorado and we really think we could make something similar (like a guesthouse) in Puerto Rico work out once we have our safety net of outside income locked in. We like meeting new people and know how to run rentals, so we think this would be ideal. Heck, if we can get people that want to live with us in Greeley of all places, you’d think Caribbean paradise would be a snap! So, onward and upward we go. Slow and steady and all that.
