Cooking with Plantains (Or Yes, We are Adapting!)

I remember when we were back in Greeley, Colorado. We tried to replicate what we imagined our life would be like in Puerto Rico. We were both so excited about all the cool things we could do when we lived there. We had indoor coffee plants, mini citrus trees, even a banana tree in our living room! I looked for anything with Puerto Rico in it. Read lots and lots of books, blogs, articles, etc. We even had chickens against all convention and with a big fight because we knew we could have as many animals as we wanted when we were outside of the rigidity, rules and conformity of the states.

We also tried cooking some Puerto Rican food. And it was an absolute failure. Not only is Puerto Rican food extremely difficult to find in Colorado (the closest thing I found was a Cuban restaurant in Denver), but even the raw ingredients were horrible! We could do rice and beans but beyond that, it was a complete loss. There are no breadfruits or traditional viandas in Colorado grocery stores, coconuts were basically rotten and we had absolutely no idea how to cook plantains. A good reminder to eat local-wherever you are! I remember one plantain we tried cooking. We couldn’t even get the skin off it. We didn’t know how long to cook it and so when we finally tried it, we were like…how did anyone think that eating these was a good idea?!

So I suppose it’s a good sign when plantains (and breadfruit and papaya and avocados and bananas and mangos) straight from your tree become part of your daily fare. I wasn’t exactly taught how to cook with these things like a parent might to a child and I definitely would like to learn some traditional techniques, but when it is all around you, you learn quickly. Here is a video of a typical breakfast. Nearly all straight from our land.

Plantains (platanos) grow and look much like bananas (guineos), but they are considered a starch or main food group rather than a snack or dessert. Here they make all sorts of things with plantains such as tostones, amarillos, mofongo, empanadillas and many others. I stick with lightly pan fried amarillos. Amarillo means yellow and so unlike most other dishes which use the green plantains, I wait until they are yellow to cook them. They cook fast and don’t need to be double fried like some of the others.

This is still very basic cooking. For one thing, we only have one single burner. And another is I don’t know exactly how to cook some of the “fancy” things like mofongo, though I love to eat it! Con tiempo, con tiempo. It was fun preparing for our move, but there is really nothing like the real thing when you fully embrace it.

Growing, eating and cooking with plantains means we are adapting. Evolving. Becoming more Puerto Rican. And it is cool because plantains also have a cultural significance. La mancha de plátano or the stain of the plantain is considered a symbol of pride for the jíbaro, the Puerto Rican country farmer, who when cutting down bananas and plantains would invariably get banana sap on their clothing. This stain is nearly impossible to remove, like the love for the country itself.

Busy Weekend: Chillin’ Dog, Coop Building, Sod Installation

This weekend has been very busy so far, and it’s not quite over yet! It definitely reminds us how much life wakes up around here with nice weather.

On Thursday after work I was in the office hanging out on the computer when I looked outside and saw the chickens flapping and running around. Then I saw a little tan blur running behind them. My first thought was a prairie dog was chasing them. I ran outside to scare it out of the yard when I noticed it wasn’t a prairie dog/gopher but rather a little dog! A chihuahua. When he saw me he just cowered next to the house. I wasn’t sure if he was biter so I reasoned with it. I even said aloud, “If you don’t hurt me or the chickens, I won’t hurt you.”

And slowly I approached him and was able to pick him up. He looked really tired and just sort of trembled and fell asleep in my lap. After a long rest we set him outside hoping that he would then run home wherever that was. However, a couple hours later after we had run some errands, he was still there. We don’t have any dog food anymore since Schnoodle died, so we just gave him a little water and cat food.

We walked around the neighborhood on Friday and asked all the neighbors if they knew whose dog he was was, but no one knew. I really don’t like to turn animals into animal control, because I know that most of them get euthanized. Especially in Greeley, chihuhuas and pit bulls are two of the most common dogs in the Humane Society, so his chances were slim if he went there. He was so chill and sweet, that I couldn’t bear that. If we were staying in Greeley, we would probably adopt him ourselves.

I told my co-worker friend about him and she said she would take him and help look for the owner. If the owner could not be found, she offered to adopt him. He definitely added a fun aspect and reminded us how fun a little dog could be -especially one that could see, hear and play unlike Schnood in her last few years.

In addition to that fun diversion, we had some work to do. We wanted to finish a yard sod installation in one of our rentals where some of our friends live. Since we don’t own a truck, we had to do all of it with our little Honda Civic.

We stocked the car full of sod and had to make about 3 trips before it was done. Sod is a little expensive, but it is nice to have an insta-lawn. I think it turned out great! See for yourself:

And after we laid the final pieces of sod, we rushed home to fix a dish to bring to a brunch and help build a coop with some other friends who are starting out with their first chickens.

January in Greeley Versus Rincon

 

I took a picture of Kitty and me today to show Britton just what he was missing -a cold morning that didn’t come out of the negative degrees until nearly noon. He then sent me the below shot of him on the beach on an 80 degree winter day in Rincon. Quite the difference. I know where I want to be (and more than likely will be) this time next year! 🙂

Cafe Panache in Greeley

The other day Cassie and I finally had a chance to visit Café Panache in downtown Greeley.  We had been meaning to eat there since we heard about their opening in the newspaper.  They focus on crepes, soups and salads.

We showed up at lunchtime and ordered a turkey/provolone/sage crepe, a romaine salad and an order of curried pork with cherries.

The restaurant has a nice French café feel to it. They play French music, serve chilled water in a wine bottle and is creatively decorated.

The food was fresh and tasty and appropriately priced (everything was around $3).  I hadn’t ever had curried pork that I can remember, but I thought it was pretty good. Overall a fun spot.
